The lid keeps in any fishy smells and creates a confined environment for steam cooking. Cooked whole or in portions, your fish will remain soft and tender, without adding any fat. I love the quality of this fish steamer. The lid fits perfectly for a great seal. The dimensions (16x9.5”) that are referenced in the specs are a big reason why I decided to go with Emile Henry. It was the perfect choice for a 16” flounder whole. So I was a little bummed when the actual inside dimensions were more like 13.5x8.5”. Trimming the tail fin will easily rectify any issues with the whole fish fitting. Overall it’s a stunningly beautiful dish to present your fresh catch to guests in.
